Butternut gives much better flesh yield than acorn squash (74%, item 2457) or the big winter squashes (64%, item 2460).

Prep notes

Cut the neck from the bulb first: the neck is solid flesh and peels cleanly with a Y-peeler, while the bulb holds the seeds. Peel just past the green streaks; going deeper wastes flesh without improving anything.

What the yield does to the cost

Butternut squash, 10 kg at £10.99 (JJ Foodservice, 10 Oct 2026) is £1.10 a kilo as purchased. At 84% usable that is £1.31 per usable kilo.

Worked example: 150 g of roast squash for a salad or side needs 179 g as purchased, costing 20p. Costed on the bought weight it would read 16p, so the costing would be 16% light: 3p a portion, or £3.14 over 100 portions.

Typical uses

Roasted squash for salads and sides, soup, risotto, curries and vegetarian pie fillings.

Storage and the trim

Whole squash keeps for weeks somewhere cool and dry, not the fridge. Once cut, wrap and refrigerate; use peeled, diced squash within three days. The seeds roast as a garnish; peel and fibres go to stock or waste.
