By · · Updated

Avocado: about 68% usable going whole Hass to flesh. That is a cost factor of 1.47: for every kilo you need ready to use, buy 1.47 kg as purchased.

Hass, the variety most UK suppliers sell, has a thicker skin than the green-skinned types, so it gives less flesh per avocado. Size and ripeness move it a lot, and so do the brown bits you trim.

Prep notes

Halve round the stone, twist apart, remove the stone with the heel of the knife, then scoop with a large spoon close to the skin. A ripe avocado peels clean; an unripe one tears and leaves flesh on the skin, which is where yield goes.

What the yield does to the cost

Fresh avocados, case of 14–18 at £15.49 (JJ Foodservice, 10 Oct 2026), assuming 16 Hass avocados of about 200 g each, is £4.84 a kilo as purchased. At 68% usable that is £7.12 per usable kilo.

Worked example: 70 g of smashed avocado on a brunch toast needs 103 g as purchased, costing 50p. Costed on the bought weight it would read 34p, so the costing would be 32% light: 16p a portion, or £15.95 over 100 portions.

Typical uses

Smashed avocado on toast, guacamole, salads, burgers and brunch plates.

Storage and the trim

Ripen at room temperature; once ripe, the fridge buys two or three days. Cut avocado browns within hours: press clingfilm onto the surface or keep the stone in guacamole only as a token gesture. Stone and skin are waste; brown patches must be cut out, which on a tired case can take another 5–10%.
